Pasta Salad

Serve this pasta salad with a great main dish and you're all set for a great summer barbecue.


  • 2 cups spiral pasta
  • ½ cup cherry tomatoes
  • ½ cup cucumbers
  • ½ cup red peppers
  • ½ cup yellow peppers
  • ½ cup green peppers
  • 2 garlic cloves
  • 1 tsp kosher salt
  • 1 whole lemon
  • 1 ½ tbs extra virgin olive oil


  • Cook spiral pasta according to package directions
  • Drain and rinse under cold water
  • Pour into large bowl; add vegetables
  • In a separate bowl mince two garlic cloves, then add kosher salt; make a paste with the garlic and salt by pressing with the back of a spoon
  • Add lemon juice to garlic paste (1 whole lemon squeezed, remove the seeds)
  • Add extra virgin olive oil
  • Mix together to make dressing
  • Pour dressing over pasta & vegetables, then toss
  • Note: this dressing is delicious with tossed salad
  • (makes two servings)
