Pasta Salad

Serve this pasta salad with a great main dish and you're all set for a great summer barbecue.
Ingredients
- 2 cups spiral pasta
- ½ cup cherry tomatoes
- ½ cup cucumbers
- ½ cup red peppers
- ½ cup yellow peppers
- ½ cup green peppers
- 2 garlic cloves
- 1 tsp kosher salt
- 1 whole lemon
- 1 ½ tbs extra virgin olive oil
Preparation
- Cook spiral pasta according to package directions
- Drain and rinse under cold water
- Pour into large bowl; add vegetables
- In a separate bowl mince two garlic cloves, then add kosher salt; make a paste with the garlic and salt by pressing with the back of a spoon
- Add lemon juice to garlic paste (1 whole lemon squeezed, remove the seeds)
- Add extra virgin olive oil
- Mix together to make dressing
- Pour dressing over pasta & vegetables, then toss
Recipe makes 2 servings
Note: This dressing is delicious with tossed salad
