Pasta Salad

Serve this pasta salad with a great main dish and you're all set for a great summer barbecue.


  • 2 cups spiral pasta
  • ½ cup cherry tomatoes
  • ½ cup cucumbers
  • ½ cup red peppers
  • ½ cup yellow peppers
  • ½ cup green peppers
  • 2 garlic cloves
  • 1 tsp kosher salt
  • 1 whole lemon
  • 1 ½ tbs extra virgin olive oil


  1. Cook spiral pasta according to package directions
  2. Drain and rinse under cold water
  3. Pour into large bowl; add vegetables
  4. In a separate bowl mince two garlic cloves, then add kosher salt; make a paste with the garlic and salt by pressing with the back of a spoon
  5. Add lemon juice to garlic paste (1 whole lemon squeezed, remove the seeds)
  6. Add extra virgin olive oil
  7. Mix together to make dressing
  8. Pour dressing over pasta & vegetables, then toss

Recipe makes 2 servings

Note: This dressing is delicious with tossed salad
