Room temperature or right out of the oven, this colorful quiche is perfect for an afternoon book club or gathering of friends. For appetizers, pour quiche in an 8 x 8-inch square pan and cut into small squares.
Ingredients
Pie Crust
- 1 cup all-purpose flour
- 1 teaspoon sugar
- 1/4 teaspoon salt
- 3 tablespoons butter
- 4 tablespoons cold water
Custard
- 2 slices bacon, diced
- 1 1/2 cups yellow onion, diced
- 8 ounces collard greens, freshly chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 whole eggs
- 2 egg whites
- 3/4 cup fat-free milk
- 1/2 cup half and half
- 1/2 cup Swiss cheese, grated
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Pinch nutmeg, freshly grated
- 1 tablespoon all-purpose flour
Preparation
- Preheat oven to 350 degrees.
- In a small bowl, combine flour, sugar and salt. Mix well. Using a pastry cutter, blend in butter until mixture is crumbly and pea-sized. Add cold water, 1 tablespoon at a time and gently mix after each addition. Mixture should begin to bind together after the last tablespoon of water is added. If too dry, add 1 more tablespoon of water. Gather mixture into a ball and let rest for 5 minutes.
- Lightly flour a flat surface and roll dough into a large circle, 12 to 14 inches in diameter. Gently press into a 9-inch pie pan and flute edges. Top dough with beans or pie weights and bake for 5-10 minutes or until crust begins to turn golden brown.
- In a large sauté pan, cook the diced bacon until crispy. Add onions to pan and sauté until translucent.
- Add collard greens to the pan and season with salt and pepper. Cook for 1-2 minutes and drain any excess water from the pan. Allow to cool slightly.
- In a large bowl, combine eggs, egg whites, milk and half and half. Whisk until well combined. Add cheese, salt, black pepper, nutmeg and sprinkle in flour. Stir in cooked collard greens.
- Pour into pre-baked pie shell and bake for 30-40 minutes or until filling is set. A knife inserted in the center will come out clean. Let cool slightly and cut into 8 slices.
Each recipe makes 8 servings.
