Collard Green Quiche

Collard Green Quiche

Room temperature or right out of the oven, this colorful quiche is perfect for an afternoon book club or gathering of friends. For appetizers, pour quiche in an 8 x 8-inch square pan and cut into small squares.

Ingredients

Pie Crust

  • 1 cup all-purpose flour
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • 3 tablespoons butter
  • 4 tablespoons cold water

Custard

  • 2 slices bacon, diced
  • 1 1/2 cups yellow onion, diced
  • 8 ounces collard greens, freshly chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 whole eggs
  • 2 egg whites
  • 3/4 cup fat-free milk
  • 1/2 cup half and half
  • 1/2 cup Swiss cheese, grated
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch nutmeg, freshly grated
  • 1 tablespoon all-purpose flour

Preparation

  1. Preheat oven to 350 degrees.
  2. In a small bowl, combine flour, sugar and salt. Mix well. Using a pastry cutter, blend in butter until mixture is crumbly and pea-sized. Add cold water, 1 tablespoon at a time and gently mix after each addition. Mixture should begin to bind together after the last tablespoon of water is added. If too dry, add 1 more tablespoon of water. Gather mixture into a ball and let rest for 5 minutes.
  3. Lightly flour a flat surface and roll dough into a large circle, 12 to 14 inches in diameter. Gently press into a 9-inch pie pan and flute edges. Top dough with beans or pie weights and bake for 5-10 minutes or until crust begins to turn golden brown.
  4. In a large sauté pan, cook the diced bacon until crispy. Add onions to pan and sauté until translucent.
  5. Add collard greens to the pan and season with salt and pepper. Cook for 1-2 minutes and drain any excess water from the pan. Allow to cool slightly.
  6. In a large bowl, combine eggs, egg whites, milk and half and half. Whisk until well combined. Add cheese, salt, black pepper, nutmeg and sprinkle in flour. Stir in cooked collard greens.
  7. Pour into pre-baked pie shell and bake for 30-40 minutes or until filling is set. A knife inserted in the center will come out clean. Let cool slightly and cut into 8 slices.
