Roquefort Pear Salad

This beautiful salad is filled with plenty of hidden healthy ingredients, like lettuce and pears (antioxidants), walnuts (Omega-3s) and blue cheese (a bit of calcium and lots of taste). The salad is perfect for a cool summer night or as the main course at your next get-together.

Roquefort Pear Salad

Ingredients

Salad

  • 2 tablespoons of pecans, chopped
  • 2 tablespoons of sugar
  • 3 cups of green leaf lettuce
  • 3 Bartlett pears, cored and chopped
  • 1 1/2 ounces of crumbled Roquefort cheese
  • 1/2 avocado, peeled, pitted and diced
  • 1/2 cup green onions, thinly sliced

Dressing

  • 3 tablespoons of red wine vinegar
  • 1 1/2 teaspoons of sugar
  • 1 1/2 teaspoons of prepared mustard
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • Pinch black pepper

Preparation

  • Blend ingredients for dressing in a blender and set aside.
  • In a skillet, over medium heat, cook pecans with 2 tablespoons sugar. Continue stirring gently until sugar has melted and caramelized the pecans. Carefully transfer nuts onto waxed paper and allow to cool. Break apart the cooled candied nuts into small pieces.
  • In a large serving bowl, layer lettuce, pears, cheese crumbles, avocado and green onion.
  • Pour the dressing over the salad and top with the pecan pieces.

This recipe makes 6 servings.
