Asian Cucumber Salad

The citrus and ginger-soy sauce dressing turn cucumbers, tomatoes and avocados into a splendid salad. Serve this on a warm summer’s day to add the perfect flavor to your next gathering.

Delicious Crab Salad

This is a delicious and healthy salad that we like to eat wrapped in lettuce. Lettuce wraps are a healthy new trend. You can use lettuce to wrap any salad or rice dish or, for a “light” change, substitute lettuce for bread and wrap your favorite sandwich.

Moroccan Couscous Steak Salad

This is a terrific salad for any occasion, and the flavor of the fruits and spices is delightful. Use leftover steak or flank steak as the salad’s base. Add in a layer of couscous for an exotic taste.

This is one of Holly’s favorite southwestern salads, and it’s great for a one-meal dish. Holly adds 1 cup frozen corn, thawed and 1 15-ounce can of black beans, rinsed and drained for added benefits and flavors.

Vi’s Sunday Greens

This recipe comes straight from Linda’s mom, who loves to cook greens on Sunday. We think they’re a perfect addition to any table. Greens are loaded with calcium, iron and vitamins. Enjoy them anytime! Serve as a meal or side dish. Garnish with sliced tomatoes and chopped sweet onions.
